They say its suppose to take less hardware to render it, since main thing with polygon is also high texture models. Since it would be tedious to do that with things that are "grains of sand", you could just paint the atoms any way you want. Personally the idea sounds better as a physics engine as what I had link. I believe in that video he also has an atom car in it, and he greatly increases and decrease the texture ...ahh resize sample limit(?).
