Hotels are pretty boring. re: minneapolis. no matter what anyone says, avoid the bulldog (ne or uptown). muddy waters is great for a variety of fresh taps, moto-i is one of the only on-premise sake breweries in the us (and has great japanese pub food), and bryant lake bowl is a good time for breakfast (or drunk bowling). last, matt's bar has the best jucy lucy in the cities. you owe it to yourself to stop there.
